Here's how to bring an excellent artisan dessert typical of the Easter tradition to your table.
📝 INGREDIENTS
- 500gr double zero flour
- 40gr natural yeast (not beer)
- 150g butter (or lard)
- 60 g grated pecorino romano
- 60 g grated parmigiano reggiano
- 5g salt
- 4-5 yolks
- 100g “sausage Neapolitan” (spicy salami and normal Naples-type salami)
- water or milk to taste
- a pinch of sugar
📌 Our casatiello recipe includes two doughs. Start by mixing half the flour (250gr) with the natural yeast (we prefer natural yeast to brewer's yeast for this preparation) and add half the butter available (75gr).
📌 At this point , knead well until you have obtained a fairly soft dough, but not too much and add a pinch of sugar to help the leavening.
📌 Let it rise for 5-6 hours.
📌 For the second dough, add the other half of the flour (250g) and the butter available (75g )

📌 Add the cheese (60g of grated pecorino romano and 60g of grated parmigiano reggiano), the egg yolks of eggs (4, or 5 if you need to soften the dough) a little salt (5g). If the dough is still a little hard you can add water or milk.
📌 Roll out the dough on the table and add your favorite diced cured meats, but we recommend the Neapolitan salami (spicy and normal ).
📌 At this point, roll up and create a donut, with the eggs in the center raw.
📌 Cook in a ventilated oven at 140 degrees, for approximately 30 minutes.
