The Mimosa Cake is aclassic of Italian pastry making, because in the simplicity of its ingredients it manages to make everyone agree, even the most demanding palates. The Mimosa Cake is used for many occasions, but one of them is the official one:Women's Day.
March 8th is a very important: theinternational day dedicated to all women who, in the present and in the past, have spent their existence for the struggle to obtain equal rights and the recognition of their role in society.
It is therefore not a simple anniversary indicated in the calendar, but an important event, which is renewed from year to year in its meaning and objectives.
The flower symbol of8 Marchis theMimosa, a flower that thanks to its strength manages to grow and thrive even in the most difficult environments and thanks to its bright and bright color it manages to illuminate entire streets, heralding the the arrival of Spring. The mimosa was chosen as a symbol of Women's Day in 1946 by parliamentarian Teresa Mattei who defined it as “a poor flower, easy to find in the countryside“.
The cake that celebrates Women's Day, therefore, could only be called Mimosa because in its appearance and colors it perfectly resembles the flower from which it takes its name.
The story of the Mimosa Cake
The invention of the Mimosa Cake is quite recent, it dates back to the second half of the 1950s by a chef from Rieti,Adelmo Renzi. The dessert became famous in 1962, when the pastry chef won an Italian pastry competition in Sanremo, dedicating his cake to the flowers of the Ligurian city.
The cake is made of a disc of sponge cake moistened with a liqueur for desserts such as Marsala and Grand Marnier or, for a more delicate result, with pineapple juice and filled with custard or Chantilly. In many versions, fresh or canned fruit is added to enrich the filling. The characteristic that we can find in all versions of Torta Mimosa isthe covering made with pieces of crumbled sponge cake which in shape and color perfectly reflect the features of a sprig of mimosa.
